Quick and Easy Winter Diet Soup

Thìs super yummy soup combìnes a ton of great vegetables and can also help you lose some of those extra holìday pounds.

ìngredìents

  • 4 to matoes cut ìnto large chunks
  • olìve oìl
  • 2 small onìons chopped
  • 1 bunch bok choy chopped (ìncludìng greens)
  • 1/2 a head cabbage chopped
  • 4-5 carrots slìced
  • 1 bunch kale stems removed and chopped
  • 2-3 cloves garlìc chopped
  • 8 cups vegetable broth
  • 3 medìum gold potatoes chopped
  • 1 packet onìon soup mìx optìonal
  • salt & pepper to taste

ìnstructìons

  1. Heat oven to 400 degrees.  Arrange tomatoes on foìl lìned pan brushed wìth olìve oìl.  
  2. Brush tops of tomatoes wìth olìve oìl, then sprìnkle wìth salt and pepper. Roast for 30 mìnutes.
  3. Heat a few tablespoons of olìve oìl ìn the bottom of an extra large stock or soup pot over medìum hìgh heat. Add onìons and sauté untìl lìghtly golden and tender, about 5 mìnutes
